What kid doesn’t like gummies?! These gut loving gummies are refined sugar free and so good for little tummies! Natural gelatin powder, that is grass-fed and organic, promotes gut health and healing. Honey is soothing on sore throats and is recommended by doctors for coughs so these are perfect if your little one is already under the weather. Ginger has anti-inflammatory properties and lemon is packed with vitamin C, important for a healthy immune system. These gummies are great for battling all the winter bugs going around! And if your kids are anything like mine, they will think they are a special treat!

Lemon, Ginger, and Honey Immune Boosting Gummies

Ingredients

1 cup freshly squeezed lemon juice (about 4-5 lemons)
2 cups water, divided
1½ teaspoons freshly grated ginger
¼ cup grass-fed gelatin (we love the Great Lakes brand)
3 tablespoons honey

    Method

    Step 1

    Put one cup filtered water, lemon juice, and ginger in a small pot and bring to the boil. Simmer five minutes.

    Step 2

    Pour the remaining cup of water into a bowl. Sprinkle gelatin into the water and leave to bloom.

    Step 3

    Strain the ginger bits and reserve lemon and ginger mixture. Add the bloomed gelatin mixture into the ginger-lemon water and whisk until completely dissolved and free of lumps.

    Step 4

    Stir in the honey. Add more if it’s not sweet enough for your liking.

    Step 5

    Pour into moulds or into a glass/ceramic dish. Pop into the fridge until set.

    Step 6

    Enjoy! My kids loved them!

    *I had a bit of the lemon, honey, ginger gummy mixture left over so I decided to do a berry version. I simmered ½ cup frozen mixed berries for 5 minute and then pureed it. I added the berry puree to lemon, honey and ginger liquid and poured into a container to set. The berries were a great addition and my kids gobbled them up!
