If you’re looking for a nutritious snack for your little one, look no further! These delicious zucchini bites are delicious and also packed with nutrients for growing little bodies! 3 medium zucchini
1/2 cup grated cheese
1/4 cup extra virgin olive oil
1 cup wholemeal spelt flour
1/4 fresh parsley
1 tsp baking powder
Pinch salt + pepper
Grate zucchini into a clean tea towel & squeeze out excess liquid. Add to bowl.
Grate onion & finely chop parsley, add to bowl.
Add all remaining ingredients to the bowl and mix well.
Spoon evenly into muffin tray. We topped with a little extra cheese.
Bake for 20-30mins or until golden on top at 200 degrees Celsius . Remove from oven & allow to cool in tray for 10mins before serving.
Delicious served warm with a knob of butter or cashew cheese.
Cheese can be omitted & replaced with chia seeds if you need these to be dairy free.
Stores well in an airtight container in the fridge for 4 days.
Freeze for up to 2 months.
