If you’re looking for a nutritious snack for your little one, look no further! These delicious zucchini bites are delicious and also packed with nutrients for growing little bodies! Annnddd they are baby and nutritionist approved. Kelly, a mama and nutritionist from Feeding the Bump, kindly shared this recipe with us. You’ll love it!

 

INGREDIENTS:

3 medium zucchini

5 eggs

1/2 onion

1/2 cup grated cheese

1/4 cup extra virgin olive oil

1 cup wholemeal spelt flour

1/4 fresh parsley

1 tsp baking powder

Pinch salt + pepper

 

METHOD

  1. Grate zucchini into a clean tea towel & squeeze out excess liquid. Add to bowl.

  2. Grate onion & finely chop parsley, add to bowl.

  3. Add all remaining ingredients to the bowl and mix well.

  4. Spoon evenly into muffin tray. We topped with a little extra cheese.

  5. Bake for 20-30mins or until golden on top at 200 degrees Celsius . Remove from oven & allow to cool in tray for 10mins before serving.

  6. Delicious served warm with a knob of butter or cashew cheese.

Cheese can be omitted & replaced with chia seeds if you need these to be dairy free.

Stores well in an airtight container in the fridge for 4 days.

Freeze for up to 2 months.
