Is there anything better than a bowl of fresh, home-made soup on a cold winters night? I think not! If you’re on the hunt for a winter warmer recipe, look no further.

My friend shared this recipe with me and it’s now a go to! This soup is not only delicious but it’s also packed with all the good things (like turmeric, lemon, and ginger!)  to replenish your body when you’re feeling a bit run down. It’s so versatile and easy to customise for your family. It is gluten free and can be made vegan by omitting the chicken and using veggie stock.  It can be made in a thermomix, or stove top but we made it in slow cooker for extra ease. Put all the ingredients in the slow cooker and by dinner time, you will have a nourishing, tasty dinner for your family!

Ingredients

2 inch fresh ginger

1 inch fresh turmeric

2–3 large cloves garlic

a handful of fresh coriander

2 spring onions

1 red chilli, seeds removed (omit chilli if your family doesn’t like it)

1 litre home-made chicken broth (or storebought)

400g coconut milk

3 tbs fresh lemon juice

2 tsp coconut sugar

2 Tbsps fish sauce (optional) (omit if vegan)

sea salt & pepper to taste

200–300g uncooked chicken, diced

extra sliced spring onions and coriander for garnish (optional)

Method

Step One

Finely mince ginger, turmeric, and garlic; finely chop coriander, spring onions and chilli; mix together in a bowl. (Reserve a bit of coriander and spring onion to garnish)

Step Two

Place the herbs and spices (from step one), uncooked chicken, coconut sugar, lemon juice, and chicken broth in slow cooker. Cook on high for 4 hours or low for 8 hours.

Step Three

Pour into bowls, and garnish with extra spring onions and coriander if desired.
